This is a very difficult question to answer. I personally worked with different type of bacteria and each of them seems to have some remarkable characteristics. I like the way Pseudomonas aeruginosa looks on agar plates producing green-blue hues or the very brilliant red of Serratia. I also like the bad but unmistakable smell of Escherichia coli when grown in liquid medium and the way Mycobacteria colonies appear on agar plates. Beside the difference in the way they look, different bacteria employ very diverse and innumerable survival strategies making them so unique.
If I really need to answer, then I would say Pseudomonas aeruginosa because of its appearance on agar and liquid cultures, its adaptability to different environments and its genetic flexibility (it is capable to acquire/loose sometime large part of its genome made of DNA).
